This could be our last weekend of summer-ish heat here in London, so why not make the most of it and have one last summer salad! This dish is really refreshing and would make a great light meal.
Ingredients

220g pearl barley

1/2 large cucumber, sliced

75g wild rocket

100g feta, crumbled

1 tbsp olive oil

Juice from one lemon

1 mint sprig
Method

Place barley in a saucepan with 1.5 litres of boiling water. Simmer for around 25 minutes until tender

Rinse under cold water and drain

Next, make the dressing by mixing together the olive oil and lemon with a pinch of salt and pepper. For a quick hack, add all these ingredients to a jar and shake well with the lid on

Place the rocket in a large bowl, then top with the barley, then cucumber, then the feta

Add the dressing then top the salad with the mint sprig, or break off its leaves and scatter on top.
